Crock Pot Chicken Soup

2-3 Chicken Fiesta “Smart One” entrees       1 can Rotel tomatoes
3. cans chicken broth                                     1 can fat-free refried beans
1 can black beans                                           1 can yellow corn, drained
Place all in a pot & bring to boil. Lower heat & cook for 45 min. Or if using crock pot-use low & cook 4-6 hours. Serves 15.

Pesto Chicken Packets

4 boneless chicken breasts (or pieces you like)
8 tomatoes cut ½” thick
frozen asparagus, peas or whatever you have
½ c basil pesto
¼ c mayonnaise
Mix pesto & mayo.
Layer chicken, tomatoes, veggies & pesto/mayo onto 4 foil packets & put on hot grill or bake in oven for 30-40 minutes. Serve w/rice or noodles. 

Crockpot Chili Beef Sandwiches

3-4 lb boneless chuck roast (or could use pork)
2pkg taco seasoning
½ c. barbecue sauce
buns or Kaiser rolls
Brown roast in skillet. Put in crock pot, cover w/taco seasoning & barbecue sauce. Cook 6-8 hours. Shred w/fork & serve on buns or Kaiser rolls.

Monkey Meat Marinade

Soy sauce, beer, garlic cloves, onion, lemon juice, pepper & brown sugar. Mix to taste & marinate pork or chicken cubes several hours or overnite. Put on skewers w/slices of onions, small potatoes, cherry tomatoes, etc. Grill.

Tortellini/Spinach Soup

1 pkg fresh tortellini, 1 box chicken stock, 1 package fresh spinach, nutmeg to taste (1/2-1 tsp), grated parmesan cheese

Cook tortellini in chicken broth according to directions. When cooked, remove & keep warm. Add spinach to chicken broth along with nutmeg until spinach wilts. Serve in bowls and sprinkle on parmesan cheese.

Tuna Tortillas

Tortillas, Diced fresh tomatoes, Canned tuna or chicken, Mexican shredded cheese

Layer diced tomatoes, tuna & cheese on tortilla. Heat in microwave for few seconds. Quick and healthy!

Hillbilly Spaghetti Pie

1 bunch green onions, chopped, 2 T. olive oil, ½ lb extra lean ground beef, ½ lb Italian sausage, 4 links (sweet or hot), casings removed, 4 garlic cloves, minced, 3 T minced fresh parsley. 1- 28oz can crushed tomatoes, ¼ t. red pepper flakes (or more for KICK!), ¼ t. dried oregano, 1 t. salt (or to taste), 2 cups water, 8 oz thin spaghetti, broken into 3” pieces, ¼ c. heavy whipping cream, 4 T. chopped fresh basil, ½ c fresh grated Parmesan cheese, 2 c. grated mozzarella cheese

In 12’ iron skillet, sauté onions in olive oil over medium heat for 5 min. Add beef & sausage & brown over medium-high heat. When almost brown add garlic, pepper flakes, oregano & parsley. When meat is brown, stir in tomatoes, water & salt. Add spaghetti, stir & cover for 8 minutes. Stir after 8 min. & reduce heat & simmer for 6 minutes until pasta is al dente. Add basil, parmesan cheese & cream-stir well. Sprinkle top with mozzarella cheese & put in oven to broil until nicely browned. (Watch carefully—takes about 3 minutes. You don’t want Blackeded Hillbilly Spaghetti Pie!)
